Chives Pancake
Ingredients:
1 cup Bye Bye Grain flour
1/2 tsp. salt
A dash of garlic powder
1 cup hot boiling water
3 Tbsp. oil
1/2 cup chopped chives
*You may substitute chives with shredded cabbage and add 1 tbsp. chopped green onion.
Directions:
1.In a medium bowl whisk the flour, salt, and garlic powder. Add a tablespoon of oil then pour the hot boiling water into the flour mixture. Stir until combined well.
2.Stir in the chopped chives.
3.Heat a medium nonstick skillet over medium-high heat. Add 1 Tbsp. of oil onto the hot skillet and swirl it around to coat.
4.Drop one-half of the batter onto the hot skillet and spread it evenly using a spatula to form a thin pancake. Cook until lightly brown on the bottom, about 3 minutes. Then flip the pancake and drizzle the edge of the skillet with ½ Tbsp. of oil.
5.Cook for 2-3 minutes, pressing the pancake down occasionally with the spatula until the other side turns golden brown. Slide the pancake onto a plate.
6.Cook the rest of the batter following step no.4
7.Let the pancakes cool a bit then serve them with or without the condiment of your choice.
