Pancakes
Ingredients:
1 cup Bye Bye Grain flour
½ tsp.salt
½ tsp. baking powder
¼ tsp. baking soda
2 eggs – at room temperature
½ cup + 1 Tbsp. milk or milk substitute
1 Tbsp. honey or sweetener of your choice
1 Tbsp. oil
Directions:
1.In a medium bowl, whisk the flour, salt, baking powder, and baking soda.
2.In a separate bowl, whisk milk, eggs, honey, and oil until combined.
3.Pour the milk mixture into the flour mixture and stir with a fork until there is no clump of flour. Allow the batter to sit for two minutes.
4.Oil a skillet and heat it over medium heat. Pour about ¼ cup of batter onto the skillet.
5.Flip pancakes when bubbles appear on the surface of the pancake. Cook until golden brown, for about another minute.
6.Serve immediately with any syrup or topping of your choice.
Make about 6 (4-inch) pancakes.
