Zucchini Brownies

Ingredients:

1 ½ cup Bye Bye Grain flour

½ cup unsweetened cocoa powder

1 tsp. baking powder

½ tsp. baking soda

1 tsp. salt

2 tsp. gelatin powder *

½ cup oil

1 cup sugar

2 tsp. vanilla extract

2 cups shredded zucchini (packed but don’t squeeze the juice, we need that for moisture)

½ cup semi-sweet chocolate chip (optional)


*Adding gelatin to the flour mixture will yield chewy brownies.


Directions:

1.Preheat the oven to 350°F. Lightly grease and flour a 9 x 9–inch baking pan.

2.In a medium bowl, whisk flour, cocoa powder, baking powder, baking soda, salt, and gelatin. In a separate bowl mix oil, sugar, and vanilla extract until well blended.

3.Pour the dry ingredients into the sugar mixture and mix them well. Fold in the zucchini and the chocolate chip (optional). Spread the thick batter evenly into the prepared pan.

4.Bake in the preheated oven until the top surface is dry, for about 18- 20 minutes.

5.Let it cool, then cut and serve. Enjoy!
